CAKE EXPECTATIONS Debbie, of Debbie’s Bakehut, reveals what cake designs will be trending in 2025: Lambeth-style and piped cakes: This vintage style from the early 20th century has been making a comeback this year and likely to continue into 2025. Using royal icing or soft buttercream, it can be used to create everything from shells and scrolls to elaborate ruffles, rosettes and other embellishments giving it an age-old elegant traditional look. They can be beautifully decorated with sugar flowers, encircled or topped with cherries. Semi-naked wedding cakes: Less is more. This simple, elegant and understated cake is still on-trend making an eye-catching centrepiece for your big day. With minimal decorations, perfectly smooth buttercream or white chocolate ganache, and adorn with fresh fruit, sugar flowers, fresh flowers or silk flowers, it still has the ability to create a stunning piece of artistry. Textured ruffles, stencils or bas-relief: Texture is creating a big wave in the wedding cake industry and is there is no sign of it waning in the coming year. For those who prefer something different from the traditional smooth finished cake, a bold and dramatic ruffle-effect, which became popular this year, is set to continue; they can be monochromatic or have a lustre finish for additional on-trend kudos! For something unique, sculptured cakes using a palette knife to create flowers or decorated with bas-relief create a 3D effect; while for those wanting a mainly white cake, wafer paper sails and or flowers create a pretty, romantic touch. Bold colours and metallic effects: Although white and ivory cakes remain the mainstay of traditional wedding cakes, couples are now opting for a bit of sparkle and colour, with bold dark hues such as black trimmed with gold being a key wedding cake trend for 2025. Gold leaf can be brushed on to cake sides or applied as a gold trim to the edge of the cake edges. Flowers and foliage: This new trend of large blooms on a plain canvas of nude or coloured icing is set to continue in 2025. A main staple in wedding cake design, we will see a rise in cascading florals down multi-tiered cakes and will become the main design of the cake. Vibrant colours of roses, peonies, and filler flowers inter-twined with greenery ranging from hand-crafted sugar flowers, fresh flowers or silk flowers add a palette of colour against a neutral background. Flavours, and dietary requirements: Although the traditional vanilla, lemon and chocolate sponge cakes are set to stay, rich bold flavours such as lemon and blueberry, chocolate and orange, raspberry and white chocolate are set to become even more popular in 2025. Although people are becoming more conscious of their diet and health, they are not prepared to compromise on their indulgent slice of wedding cake.
