Meet Ann Pickard of The Icing Centre Where did your journey into cake creation begin? My wedding cake story began when I worked as a Saturday girl at a bakery in Westbury-on-Trym when I was 14 years old. I then went on to study in Cheltenham to hone my skills. What’s your favourite thing about working in the wedding industry? For me, the two best things are being able to work from my lovely studio at home and the fact that I only ever see customers who are happy and excited! What sweet treat do you turn to for comfort? My favourites have got to be either coffee cake or white chocolate blondies. How can couples adapt their cake design for a smaller wedding? If the couple feel a three- or four-tier creation is too large in the current situation, then I’d suggest a two tier with a very tall top tier to give stature. I’d been creating birthday cakes and selling cupcakes at local food fairs for just over a year when my sister surprised me with tickets to an international cake show. I walked through the doors and saw the most jaw-dropping cakes; I knew then I wanted to design the most magnificent cakes I could think of. Fast forward seven years and I’m now the proud winner of nine international awards from that very show. What’s your favourite thing about working in the wedding industry? I have so many favourites. From meeting couples for the first time and starting our journey together to designing from paper to cake. I absolutely love the wedding day – when all the magic comes together beautifully. My heart does a little dance every time! What sweet treat do you turn to for comfort? I’m not very rock and roll – tea and biscuits make me happy! How can couples adapt their cake design for a smaller wedding? A lot of our couples are opting for an elegant one-tier cake with matching individually boxed cupcakes for any guests that are unable to attend.
