W hile cakes have always been a staple at weddings, they’re coming into their own recently with showstopping, theatrical creations becoming the centrepiece of the day – whether you’re holding out for a grand affair or hosting an intimate celebration. We wanted to introduce you to some of Bristol and Somerset’s best bakers – the people who can bring a sweet delight to your big day… We meet the regions’ best wedding cake designers The sweetest THING Meet Sam Hunter-Wandzel of Cakecakecake Where did your journey into cake creation begin? I was already making birthday cakes for family and friends, so when it came to my big day I decided to make my own cake. This was the point when I decided that I wanted to make more; I love the delicate aspects of wedding designs. What’s your favourite thing about working in the wedding industry? I enjoy everything about being in the wedding industry, starting with meeting excited couples and discussing their vision, and of course, tasting! I love setting up at the venue and seeing the buzz of all the other trades setting up and perfecting their own part of the day. What sweet treat do you turn to for comfort? For me, the best cake is a rich fruit, well matured in brandy with marzipan, and the biggest must for me is royal icing! If not a fruitcake, I will turn to shortbread for a sweet fix. How can couples adapt their cake design for a smaller wedding? During this hard time when guest numbers have been restricted, the weddings that have gone ahead have had to adapt. If the couple still want the visual effect of a three or four-tier creation, we have used dummy tiers and only one or two tiers of actual cake. My journey began after my second daughter turned one – mainly to start making lovely birthday and christening cakes! I took an accredited course in cake decorating and design, and it all took off from there. What’s your favourite thing about working in the wedding industry? I love to bring my couples’ visions to life and see their reactions when they see the final design. It gives me so much joy to see their enthusiasm and to be involved in their special day. What sweet treat do you turn to for comfort? I absolutely love cupcakes; they’re my go-to sweet treat. How can couples adapt their cake design for a smaller wedding? Couples don’t have to sacrifice the look of a bigger cake for a smaller wedding. Layers of iced polystyrene tiers can add to the look without wasting cake – and no one would know it’s not real.
