92 Urban Spice Box Urban Spice Box is passionate about serving the best Punjabi heritage street food by including delicious fresh home ground spices that are the heart and soul of cooking. Husband and wife team Vick and Satnam Kaur are inspired by Punjabi roots. Vick who originates from Amritsar grew up surrounded by Street Food hawkers. Enjoying delicious food and living a humble life was the tradition and with his passion for cooking he started working alongside the hawkers of Punjab. Here he learnt the hidden secrets of how to unlock the alluring aromas and magical flavours of over a hundred spices. Satnam met Vick whilst touring India where Vick’s aromatic dishes soon won Satnam’s heart. They got married in 2007 and settled in Birmingham. After working hard and having a family, they are finally ready to break out and show the Midlands what lip-smacking, authentic Indian street food is all about. They get all their vegetables and locally sourced meat from responsible suppliers and cater to vegans, vegetarians, and meat- lovers. There’s something for everyone with their diverse menu that offers food from curries to chaats and wraps; not all Indian street food is spicy and that it’s actually about the blending of spices. Urban Spice Box promote the Meat Free Monday campaign because they believe the greater the number of people who support this, the greater the impact on the planet! They’re always working towards reducing food waste by planning ahead and carefully selecting their ingredients and using recycled and recyclable packaging to serve the food. Satnam and her husband thought about their favourite comfort food they said,“ I believe in our home it has to be Rajma Chawal (red kidney bean curry served with steamed rice). This is a dish that takes time to cook, the red kidney beans need to be soaked overnight so it is often cooked when we know we’re going to have some family time. “It’s the love that goes into making the gravy that makes it so delicious, the texture of the rajma in the gravy with fluffy steamed rice makes it a favourite. It’s not just loved in our home but also all over Punjab.” Contact: 07517 931 111 Caviar & Chips Caviar & Chips is a catering company specialising in weddings aiming to make a client’s wedding day better than they could imagine. The company was created by Jonathan Carter-Morris and Marc Hornby who both had a strong background in hospitality. Jonathan had a clear idea of what he would like on his wedding breakfast menu but couldn’t find a caterer that could accommodate what he was looking for because many had a fixed-menu approach. So, he brought together a kitchen team as well as a front-of-house team and catered for his wedding. Marc was frustrated with the mass catering and impersonal nature of front-of-house – particularly as a vegan being served the wrong dish at virtually every dinner. So, together they created a bespoke, client-led catering company that puts the client first and deliver anything that the bride and groom would want from their wedding catering. They work with every couple in a bespoke way and approach every event with a blank piece of paper. All the menus, preparation and service for both food and drink is crafted around the ideas and plans of the customers to ensure they have a truly amazing experience. With a clear and simple payment approach, clients can see exactly what they’re paying for without any complicated terms or additional charges. For Caviar & Chips, the first step is meeting the client to ask questions such as how they met, what food they enjoyed growing up and any memories they share of first dates and more. They then bring this together to craft a menu and format of service for the day. The customers have a lot of control with the choice of food, in fact, clients make 90% of the decisions for their menu. The catering company would then prepare a menu tasting for them and normally a couple of friends or a small dinner party. Up to the big day, communication is key and this company keep in touch in terms of guest numbers, dietary requirements and any last-minute things couples may need. Food won’t be the only thing included as they provide linen, crockery, tableware, matching wines and more. Jonathan comments on his favourite comfort food saying, “As a proud Lancashire lad my comfort food dish takes me back to my roots, let’s talk about the neck of lamb and the good old Lancashire hot pot.” He adds, “Like most things with this dish, you can do whatever you want, or believe whichever story you like best – it really is a dish you can make your own.
