68 THE APPEAL… “For a princess-style wedding, a ruffle cake’s gorgeous. This finish makes it so romantic and with a little embellishment, it’ll come to life,” says Nikki. “White-on-white texture’s always a favourite. Pushed to the limits, pure white is the epitome of elegance,” adds Susan. THE LOOK… When it comes to decoration, the sky’s the limit as Susan explains. “There’s a range of techniques including lace, moulds, flowers, and overlays. If your design has a lot of texture, be sure to place it in a well-lit spot or your guests won’t be able to see the beautiful decoration properly.” THE APPEAL… “A soft graduated ombré remains a favourite with brides but the newer watercolour designs create a similar soft romantic look while allowing for a number of shades to be merged and swirled,” explains Susan. THE LOOK… “Adding bright peonies and roses in fuchsia pink, burnt orange and white would look stunning along with some bright paint drips. This would be an ideal summer design,” says Nikki. “Make sure that the cake backdrop and immediate surrounds support the splashes of hue in the cake and it’ll look fantastic!” adds Susan. THE LOOK… “Metallic combined with marble or a greenery theme is a match made in heaven. Be careful not to overdo the metallic element as too much is likely to overpower the design. If you’re not sure about a whole tier, why not have a few flecks or even a shiny cake topper?” Susan adds. THE APPEAL… “This look’s wonderful for a modern cake. Metallic dust creates a lustered finish, while gold leaf has a more organic texture as it’s applied with edible gold sheets that are naturally a little ‘creased’,” advises Susan.
