Some favourites this year have been rosemary and cardamom, pistachio and lime and chocolate and espresso!" - Daisy CAKES 45 “I think we will continue to see a movement towards modern, design-led wedding cakes for 2021. And as part of this, there will be new modern buttercream techniques coming to the fore, including textured and industrial styles, such as this central concrete-effect cake (pictured above). Although it's quite an unusual finish for a wedding cake, it's so versatile – you can use the technique to create something super industrial, minimalist and quite masculine yet when softened with pretty fresh florals and pastel-coloured macarons, for example, it creates a perfect blend of modern elegance." - Daisy VERY VANILLA Daisy Pratt is the owner and cake designer of Very Vanilla, a Cotswolds-based luxury wedding cake design and patisserie specialising in modern cakes and dessert tables for weddings and events across Gloucestershire, Oxfordshire, Warwickshire and beyond. We caught up with Daisy to ask what popular and trend-setting designs she predicts we will be seeing at weddings next year. “Another buttercream style rising in popularity is the abstract watercolour effect, which is a statement look and creates beautiful movement and flow.” - Daisy ▼ ▲ “Another growing trend we think will be big for 2021 is a change from the conventional tiered wedding cake format. There's no need to stick to the classic 10-inch, eight-inch or six-inch formation. A tall slender cake, with an inch between each tier size, looks so elegant. Stacking a cake with tiers in different heights also makes a real statement, paving the way for feature tiers." - Daisy ▲ “We have been getting more requests for dessert tables in place of a traditional sit-down wedding breakfast or savoury canapés at the drinks reception. There is a growing desire for this design-led approach which produces bespoke cakes that stand out and enhance the overall theme and atmosphere of a wedding." - Daisy “For weddings next year, many of our designs are featuring patisserie-based decorative elements such as tempered chocolate sails painted in beautiful metallic shades to add extra height to tiered cakes, or a decadent alternative to adding ruffles and texture. We will also be using pulled sugar to create clear, twisted shards which have a beautiful, ethereal vibe.” - Daisy
