SWEET DREAMS We’re great cake lovers and want a real showstopper for our wedding. What’s set to be popular for the year ahead? Wendy says: Dried flowers and foliage are very on trend at the moment and mixing dried leaves with hand-crafted sugar flowers can make a delicate and eye-catching display for your wedding. With the number of guests allowed still likely to be restricted many couples are choosing smaller, one- or two-tier creations, which can still be strikingly beautiful and elegant. Adding texture is another key element. This can be achieved in many ways including ruffles, textured icing and wafer paper flowers from large blooms to tiny delicate ones directly on the icing. When it comes to colours, there’s a move towards palettes of ochre, mustard and buttery tones in 2021, which will add a calm, relaxed vibe to your wedding. What would you suggest for the bar to make our celebration stand out from the crowd? Matt says: During lockdown people have been reaching out and getting in touch with loved ones that perhaps they haven’t seen for a while. Although contact has been in a different form, connections have been re-established, friendships reinforced and people are ready to celebrate in a big way! Matt predicts: ❤ Continued love for outside, festival- and boho-style weddings – the perfect fit for a mobile bar. ❤ A definite trend for locally produced craft beer and drinks. With heightened awareness about supporting local businesses and also the environmental impact of shopping locally, this is now very important to many people. Sourcing and supplying drinks, tailored-made to each event, gives couples much more choice about what’s on offer and where it has come from. ❤ Gin is still very much in demand, however there’s a shift towards other spirits and rum has been on an upward trend for some time now. I expect to see its popularity continue to grow as there’s such a variety including white, dark, spiced, and that’s just for starters. ❤ With so much time on our hands last year and lots of summer sunshine, there’s been a surge in interest in cocktail-making so no doubt there will be some intrepid tasters circulating. We’re certainly looking forward to creating plenty of delicious tipples to order using the finest juices and spirits, fresh ingredients and garnishes.
