Not only a feast for the eyes but the tastebuds too, it’s a mouth-watering concoction of berry spiced caramel sponge and salted caramel frosting, finished with dried edible daisies, fresh figs, berries and an organic blueberry jam drip – all vegan and ethically sourced too. www.theicedvegan.co.uk A cake with a hole is a winning conversation piece. Created by Emma Thorbun of Buns of Fun Bakery for a photo shoot at Norfolk wedding venue Thurning Hall, she says, “When I made this cake I wanted it to be like nothing I’d seen before.” The flavours were peach and raspberry and it was decorated with food-safe papaver, ranunculi, lisianthus and hellebore flowers with raspberries and peach tinted-white chocolate pressed discs. The idea of the hole was to represent life pre- and post-vows; you could also take photos of the happy couple through it. This showstopper by EriVica Cakes combined two four-layer sponge cakes, one red velvet and the other lemon drizzle, with a traditional fruitcake on top to be saved as a christening cake. The bespoke design included tiny bride and groom caterpillars at the bottom, stained glass windows all the way up the tree with 30 or more wired butterflies adorning the top branches. www.erivicacakes.com CAKES 51
