Over the last three-and-a-half decades, Nick and his family have overseen some major changes transforming it from a two-star to the highest rated four-star hotel in the area, with 39 en-suite bedrooms, three restaurants and a large function room. Nick joined the family-run business in 1984 after his dad Roger asked him to step into the breach when the hotel manager handed in his notice.
