A mere stone’s throw from the vibrant village of Knutsford, Cheshire, Cottons Hotel & Spa was born out of a 1950s jazz roadhouse. A WARM WELCOME Although I arrived late summer, with the Hotel’s warming dark wood and bare brick interiors, and welcoming riot of floral colours, I can imagine it being just as fine on a chilly winter’s day. As I flung open the door to my room, my eye was immediately attracted to the enticing corner sofa and cosy hot pink cushions. So, after a long drive I flopped down and grabbed the remote control – it was after all, the last days of the Olympics! LOCAL FOODIE FARE I tore myself away from my corner sofa just in time for a 7.30pm dinner in the restaurant. Home-cooked AA Rosette food, made from scratch by the Hotel’s chefs is served here. Local, fresh and full of flavour, they use only top quality seasonal produce from the best suppliers in Cheshire. The menu boasts plenty of hearty, humble fare from day boat caught fish of the day to Cottons pie of the day. I opted for the beer battered fish and chips with crushed peas, lemon and tartare sauce, which was a real treat. I followed this up with the crème brulee with shortbread biscuits, seasonal fruit and sorbet. Grab a booth if you can for a romantic and intimate dining experience. As comfy as the beds are here, meaning getting up early will be a chore, it’ll all be worth tearing yourself away when you make it down for breakfast! While an impressive array of delicious continental breakfast delicacies await for you to help yourself to, there’s also an enticing menu of hot food available to order. Choose from speciality dishes including vanilla French toast, American stack pancakes, smashed avocado on toast and so much more. Normally one for a full on cooked breakfast, I was admittedly still feeling defeated by dinner the night before and decided to play it (comparatively) light with the Eggs Royale. This dish of poached egg, smoked salmon, and fresh hollandaise sauce atop English muffins is my new favourite way to start the day! AND...RELAX I decided the spa wasn’t to be missed. So, with book in hand I headed on over at my earliest convenience. The sun-drenched conservatory with its loungers called to me and there I whiled away a couple of relaxing hours pausing to take a dip in the pool and Jacuzzi. I soon decided it would be a waste of the last drops of summer not to head outside for a bit where I’d noticed further loungers and some folk taking advantage. There I found the hot tub. Relieved I hadn’t missed this experience I soaked there for a while before I absolutely had to go back to the room to get ready for dinner! The Tabley Suite can accommodate up to 80 nearest and dearest. You’ll love exchanging your vows in this open and beautiful room. Also, available for your celebrations, this bright, airy conservatory is ideal for gatherings of 80 and boasts its own private bar and outdoor terrace. If you’re dreaming of saying “I do” in front of all your friends and family, the Verandah Suite is the space for you. Seating up to 180 guests for ceremonies and the revelries this, the largest suite, includes ambient lighting, a glass-fronted balcony overlooking the Cheshire countryside and a large dancefloor to boogie the night away. With its own private entrance and private bar, this is the perfect space for day and night. Naturally lit, the Plumley Suite is the venue’s most intimate space hosting ceremonies of up to 30 loved ones. Able to accommodate receptions for the same number, the room has a lovely contemporary feel. You’re also welcome to make use of the small but stunning garden space; ideal for welcome drinks and exquisite photo sessions. It features a large pond, sweet-smelling flowers and a contemporary wooden terrace, which you can make your own by adding fairylights and your choice of décor.
