CAKES 69 The rise in vegetarian and veganism means that more and more couples are searching out cake designers who can accommodate their dietary requirements. As the traditional fruitcake has waned in popularity, dairy free, gluten free and vegan cakes have replaced it. Couples can choose to go completely vegan with their cake, with an ever increasing range of great vegan alternatives for ingredients and decorations. Or, they can treat their guests to a range of ʻfree fromʼ goodies such as cupcakes and mini cakes. The less traditional approach to baking ingredients also means that there is plenty of scope to develop bespoke flavours for couples who wish for something different. Bakewell tart, brandy soaked tiramisu, fresh elderflower and lemon and Sicilian orange and almond are delicious examples of recent requests. The options are endless. ‘Free from’ cakes Romantic, whimsical and softly styled cakes never go out of fashion. In 2019 we've seen brides going bigger, with an abundance of big, blousy blooms and plenty of unstructured foliage. In both fresh and sugar flowers, these arrangements add a classic beauty to the look and feel of your wedding which will never date in your photographs. In 2020 it's likely that this will continue, with cakes getting bigger and swathes of sugar bloom arrangements draping from top to tail. Blush and ivory tones continue to be the most popular for this style of cake but we will see more interesting colours coming through, including cornflower blue and mint green. The use of metallics continue to be popular, but is now more likely to be used to accent tiers and sugar work rather than covering large areas. Distressed metallic embellishments and pops of gold on sugar leaves adds a modern twist to a classic style.
