Your Berks, Bucks & Oxon Wedding - Jun/Jul 2019 (Issue 77)

76 “The biggest emerging trends over the past decade are naked and semi-naked cakes. This trend continues to evolve and has accompanied a move towards decorating wedding cakes with real flowers. I do still get requests for sugar paste flowers, though, so that the couple can keep the flowers as keepsakes – or even use them on their first child’s wedding cake, if the couple haven’t followed the tradition of saving a tier of fruit cake.” – Victoria, victoriassponges.co.uk “A trend that isn’t going away anytime soon is metallics. Rose gold can be beautifully paired with blush pink and shades of light grey, while having a marble effect has been very popular and matches this palette perfectly. Metallics have been popular for a while now, with cake designers being asked to adorn whole tiers in edible leaf or add small accents to semi-naked cakes.” – Sarah, sweetindulgentcakes.co.uk “Marbling effects are popular right now, as are naked and semi-naked sponge cakes that not only look stylish, but you can also get experimental with flavoured buttercreams and decorations. These are great cakes to also serve as dessert. I think cake styles have become less busy, and round cakes are always in – and I feel they look more stylish. The demand for vegan and gluten-free cakes has grown massively over the past year or so. I use my own recipes, including gluten-free Great Taste award winners: Tunisian orange and almond cake and carrot and cardamom cake and have just launched a range of vegan cakes, including banana and pecan, mocha and walnut, vegan red velvet, jasmine tea fruit cake and ginger and lemon cake.” – Paul, cotswoldbaking.co.uk Contemporary cotswoldbaking.co.uk cotswoldbaking.co.uk sweetindulgentcakes.co.uk victoriassponges.co.uk cotswoldbaking.co.uk cotswoldbaking.co.uk
