CRÈME DE LA GEM Get to know Gemma… When did you start baking? I first started baking in 2010 for friends and family and found myself wanting to learn the latest cake trends and trying out different flavour combinations. It was my brother who pushed me into starting my own business, I’ll never forget him saying they taste too good not to share with the world! When did you know wedding cakes were your passion? It wasn’t until 2021 when I planned my own wedding that I found a real passion and appreciation for couples getting married. It’s an industry that I’ve truly grown to love. How can you best describe your designs/services? I like to describe my designs as being rustic, romantic and floral. Couples can expect a smooth hassle-free service when booking their cake with me. I fully understand the amount of pressure that goes into planning a wedding, so I’ve made the process as straightforward as possible. Top tip for couples choosing their wedding cake: Unless you’re having your cake as your dessert, you really don’t need to cater for everyone, having a cake that feeds around 75% of your guests is perfect! What’s your go-to dessert? This is a hard one as I have a really sweet tooth, but I think I would have to say Eton Mess. There is something special about fresh fruit and crunchy meringue, it’s not to heavy and always delicious! Do you watch The Great British Bake Off? Yes I absolutely love TGBB it really highlights how complex baking is! I love the technical challenges, and watching them try and bake things they (or I) have never heard of. I offer two-tiered wedding cakes, and my cake menu includes not only the classic flavours but cakes from around the world. I do enjoy researching recipes and customs related to how festivals and special days in the annual calendar are celebrated. My cakes are well-filled, freshly baked and fluffy, but importantly enjoyable to eat! Additionally, for weddings I offer dessert tables, these incorporate fresh fruit and edible flowers to create an elegant, floral, natural aesthetic, and really a celebration of colour in the overall look. The dessert table is also a great social opportunity for the guests who are not familiar to talk to.
