28 TWO RINGS TO BIND THEM Tegen and Sam are a couple after my own heart – they opted for a Lord Of The Rings inspired wedding. Fellowship of The Ring being my favourite film, how could I not feature? Tegen looked every part the ethereal elven princess. Is anyone else still buzzing from the Olympics and Paralympics? I don’t know about you, but my social life was completely on hold while it was on! I can’t believe we have to wait another four years before it rolls around again. As someone whose idea of exercise is getting off the sofa and grabbing a snack, I always admire everyone who takes part. When the time came to write to you for this issue, the Olympic moto got me thinking: faster, higher, stronger – together. It’s that final word that always causes my heart to soar. It’s that one word that truly speaks to what the Olympics is all about. It’s bringing the world together in friendship and camaraderie, and does the same within the teams of each individual competing country. When planning this issue of Your Sussex Wedding, the notion of togetherness came to me again. It defines a marriage, doesn’t it? You are, after all, in it together and that’s why you say “I do” and make those vows. You form a forever partnership to navigate life together. I believe that’s the way forward for all of us. To see the complete list of dining options and menus, visit https://tottingtonmanor.co.uk/dine-with-us.shtml Nearlywed NEW GROUND Local photographer Tony Graham has added Selden Barns to his roster of photographed venues, and was mightily impressed by all it had to offer. “In terms of photos, because everything is on site, you can do bride and groom prep, ceremony, groups and couple shots all in one place,” he explains. “The lovely bride room had plenty of light and there are other rooms free from distractions if needed.” The couple’s ceremony was al fresco, so Tony was able to shoot at a low ISO for the best file quality. “Usually churches and registry offices are so dark you have to up the ISO, which affects file quality,” he explains. What’s more, since the venue is blessed with some stunning surrounding scenery, Tony was able to find at least six or seven on-site locations for the group and couple shots; meaning the couple were able to choose from a huge variety of images without the need to leave the venue grounds. MICHELIN-STAR PERFECTION Editor Kelly Andrews recently got the exciting chance to visit Michelin-star restaurant, The Pass, located at South Lodge in Horsham. Read on as Kelly explains why it’s a must-visit if you’re celebrating your engagement or for the ultimate date-night treat. It’s been a long-held dream of mine to dine at a Michelin-star establishment, so when I was invited to The Pass with chef Ben Wilkinson at the helm, I leapt at the chance. I’d heard that Ben’s seasonal menu was full of delectable flavours, earning the restaurant not only that coveted Michelin star but also four AA Rosettes – my mouth was already watering at the prospect of the seven course tasting menu! The intimate dining area puts you right at the heart of the action. We were shown to our table neighbouring one of the glass walls that gave us a direct view of Ben and his culinary team as they cooked up a storm. As a huge fan of BBC’s Great British Menu, I was in my element and felt as though I was living my own episode. Admittedly, mum didn’t get much scintillating conversation out of me as I was too mesmerised by what was going on in the kitchen! Fascinated, I watched one of the team prepare our hors d’oeuvre and then bring them out to the table to explain what each one was. As mum has a scallop allergy her dietary requirements were discussed when we took our seats and each ingredient carefully checked with her. Her mini morsels and starter were then attentively crafted especially for her. This unprecedented care was greatly appreciated. Each mouthful was a delight and excitingly heralded the remainder of the menu to come. Starter for me was a zingingly fresh tomato, scallop, green olive, garden herb and Mylor prawn dish. The menu is inspired by the local produce picked daily from South Lodge’s walled garden, nowhere was this more evident. For someone usually repulsed by tomatoes, the fact that I not only ate it, but enjoyed it and can list the tomato granité amongst my highlights, is quite the testimonial! The first wine pairing, served by the sommelier, was a Corsican white to complement the freshness of the fish. When the second course was delivered by the man himself, Ben Wilkinson, I must confess to being a little star struck! After all, chefs are among my personal heroes. This was celeriac, beef fillet, smoked emulsion, royale, beef cheek, hen of the woods and, a must for any fine-dining course, decadent truffle. The earthy, rich flavours made this my favourite course. Served with treacle bread and an elegant little glass of beef broth, the beef fillet was a tartar bite atop a slice of toasted sourdough. Meanwhile, the crispy celeriac brought a further textural joy. Simply amazing! This was paired with a delightful, super-light red wine: Mercurey Permier Cru, Clos des Barraults. The fish course of day boat turbot with a local Ridgeview sparkling white wine sauce (paired with Pacher Hof 2021 Grüner Veltiner), was followed by the lamb course (with Clos St Jean Cahors 2002); a roast loin with sweetbread dumpling, courgette, lamb belly, and a salad with pine nuts, and an anchovy dressing. Mum and I both agreed that we’d never tasted lamb cooked so beautifully, it melted in the mouth. Although there was an optional cheese course offered at this point, fearing we wouldn’t be able to fit dessert in (which would have been a disaster) we politely and strategically declined and moved on to the sweet stuff. At this point I have to give kudos to Ben’s chef de patisserie. Both the pre-dessert and dessert were not only works of art, but tasted every single bit as good as they looked. The light as air, fresh strawberry opener with ewe’s milk curd, strawberry sorbet and elderflower cleansed the palate ready for the cherry, almond and chocolate delice. Who knew this perfect pebble of chocolatey deliciousness would be so light? The dessert wine, a 2021 Mas Amiel Vintage Rouge with its nose expressing framboise, cherry and creme-de-cassis was the perfect complement. Not just a restaurant, The Pass is a gastronomic experience. There can be fewer ways finer to celebrate a truly special occasion whether it be pre- or post-wedding day. Tegen and Sam met at the University of Brighton. Sam lived with a mutual friend and she first laid eyes on him at a gathering at her digs. Although they didn’t speak much that night, when Sam posted a few days later that they’d be hosting a barbecue over at theirs, Tegen responded to ask if she could join them. Unfortunately, the barbie didn’t go ahead, but Tegen invited Sam over to watch films and chill with her housemates instead. “I fell in love with him the third time I met him,” Tegen shares. “I arranged to take our housemates down to the beach one day and picked Sam up on the way. When we got to the beach we were inseparable.” They spent the next week together and became official a month later. “I fell in love with his ocean blue eyes, curly hair and dark sense of humour,” Tegen continues. “Since then, he’s been such a gentleman, he always takes care of me, and we always put each other first above anyone else. He’s my safe space, home and heart.” In the summer of 2022, Sam booked Tegen a spa day at Nutfield Priory in Surrey as a treat, and booked her a full body massage. He also told her that he’d booked something extra and that she should go to the hotel reception after her treatment. When she did so, the desk staff simply said “follow me.” When they went up in the lift Tegen was thinking there was a restaurant and he’d booked her an afternoon tea, but they stopped in front of the Byron Suite. “The lady opened the door and I found rose petals and candles leading up the spiral stairs to the top of the tower. It was only then that I realised what might be about to happen!” Tegen remembers. “As I walked up the stairs my stomach was full of butterflies and I was so excited and nervous.” When she reached the top, Sam was down on one knee by a heart of rose petals. They both cried happy tears, as of course, the answer was “yes.” Tegen had no idea, but it turns out he’d been plotting the proposal with her friends for about six months. He’d even asked his grandparents if he could propose with a family heirloom, made in 1909. Tegen is the fourth bride to wear the 19ct gold diamond and sapphire ring. Tegen had her heart set on an al fresco wedding with a woodland, elven feel. So, they visited The Ravenswood and discovered that it was the one. “On the day I really felt like an elven princess with my Prince Charming waiting for me,” Tegen says. Join us as the bride tells us more about W-day, 7th May 2024... SETTING THE SCENE There were plenty of fabulous details to complement their Lord Of The Rings theme. The couple opted for a sweetheart table and the tables were all named after Middle Earth locations. Favours were wooden keyrings with guests’ names on them, which doubled as place names. Centrepieces were cherry blossom trees with Polaroid photos hanging from them featuring the couple with the guests seated at that table. Tegen’s bouquet featured a mix of dried and fresh flowers. “This was something I wanted, not so much driven by the theme, but I’ve always loved the look of a dried bouquet with some fresh flowers,” Tegen explains. The aisle was lined with small boxes of artificial flowers, with two further feature crates at the top with glass candle holders. The two 10ft wisteria trees also at the end of the aisle pulled everything together for a an elegant, romantic woodland vibe. The couple opted for a two tier semi-naked cake to suit the Lord Of The Rings period of minimalism. The venue catered the wedding breakfast as part of their package. Guests dined on a starter of salmon and veggies, followed by lamb shank, and crème brûlée for dessert. LOOKING THE PART Tegen went into the bridal boutique with the idea she’d walk out with a mermaidstyle gown but instead chose a fitted silhouette. She fell in love with its beautiful lace train, which gave it a woodland feel. “I had the back of the dress changed as it was held together with a small beaded cross back, which I just didn’t think suited it,” the bride explains. “I went to the Wedding Dress Surgery in Croydon and Tina created a back that was perfect, which continued the lace look but on nude netting which gave the impression of lace floating on my skin.” She completed the look with Arwen’s Evenstar necklace and wore an elven-style head dress. She also accessoriesed with beautiful diamond earrings that once belonged to her maid-of29 REAL WEDDING
